Fried catfish, braised kale, buttermilk cornbread, blueberry cake!
Y’all, there was A LOT of cookin’ going on in this house today! The time changed, so now we’re tired AND stuffed! But oh my, this meal!
Jarrod made the blueberry cake this afternoon, and the house smelled SO good! It tasted as good as it smelled! We love Alison Roman, if you haven’t seen any of her recipes or videos, look her up on YouTube, she is usually featured in the New York Times. She’s hilarious and adorable and makes fantastic food. The catfish was messy to make. Any time you’re dipping and dredging, you’re gonna make a mess. However, definitely worth the clean-up. Jarrod kept making yum noises and said it was delicious, so yay! Sean Brock’s cookbook South has lots of great recipes in it, and I like that he tells you where to source some of the ingredients he calls for. The cornbread was a winner too, no surprise, is another Jubilee cookbook winner, and also, made by Jarrod. This one was a team effort!
I was winging it with the kale. We needed a veggie, so I fried some thinly sliced shallot in olive oil, added garlic and red pepper flakes, and tossed in some chopped up kale and a little water. The kale wilted down and had a nice kick to it. I did salt it just a tad too much. Keeping it real, I am not a flawless cook! Far from it! Then we made some VERY impromptu tartar sauce (as in everything else was ready and then we remembered we needed some!). Did not measure a thing, but took some mayo, relish, mustard, salt, and dill and stirred it all together. Not too shabby for literally the last minute! We added in a couple of the Florida Cracker beers we had left. And now we have crashed in front of the TV, stuffed and tired and happy!
