Brisket, Biscuits, and Beans! (Say that three times fast!)
Whew! I don’t know what I was doing last night, but I got distracted and didn’t get the dinner post up. We are in weird, uncertain, unprecedented times. You’re stuck at home. You can’t eat out now unless you get carry-out. You might as well read a food post and maybe figure out what to cook for dinner!
This whole dinner was based on the fact that I had a brisket in the freezer and I wanted to make my Grandpa’s recipe. The photo below is of the “recipe” my mom hand wrote from what he told her to do years ago. 🙂 It’s a little bit deceptive because he used to cook an entire 8-ish pound brisket, and mine was only about 3 pounds. I didn’t have to cook mine nearly as long, maybe about two hours, but you are definitely looking for low-and-slow when you cook a brisket. I used a can of beef broth, salt and peppered the meat, cooked low on about 250 degrees for an hour. Then I took it out, basted, and spread the soup mix on top, and back in the oven for another hour. In the meantime, I made the biscuits from a recipe in (what else?) the Jubilee cookbook.
The green beans were delish! I was totally winging it with this one. I sauteed about half a small onion and a clove of garlic in olive oil until nice and browned, then added in a drained can of green beans. I fried the beans until they started to get a little crispy, and then tossed a couple of spoonfuls of the brisket liquid in the pan, and hit it with a little S&P, and let the liquid reduce. SO good! As much as I love my cookbooks, I have to say sometimes it is really fun to just improvise!
