Yes, I know it’s spring, but this is our last hurrah for winter!
So, how’s your pandemic going? You bored yet? I hope not, I fear we have a ways to go before this is over. Hopefully you can rest, relax, read, work on a hobby, catch up on your TV and movies, exercise, and EAT! Good grief are we eating.
So this week is a redo of one of the meals I made previously that I KNEW could be better and I thought it deserved a second try: the Pork Chops with Rich Caper-Lemon Sauce. I was right!
I used the boneless chops; I reduced the liquid by about half a cup of chicken stock, and I increased the flour to 2 teaspoons. I cranked the heat a little higher and let the sauce reduce more and VOILA! Y’all, that sauce was as close to perfect as any sauce I’ve ever made. Seriously, I licked the spoon, my plate, maybe a finger… (shh, I washed my hands about 5 times). It was silky and so flavorful. I think last time I hadn’t added the hot sauce so I used Tabasco this time, and it’s by no means hot, but gave the flavor a little more depth. It was SO GOOD. You could also put it on chicken. Or you can just do shots of it. Whatever, I won’t judge.
For our sides, I roasted some diced sweet potatoes with olive oil and kosher salt (one of my go-to potato sides) and since now I’m obsessed with the green beans I fried up last week, I made them again! They were both great and go very well with the pork. Delish!
I will say, South For The Winter has been fun, and I am in love with that Jubilee cookbook, so a lot of the things from this winter will become staples now in our kitchen. Always a good thing! Although in moderation, the bathroom scale and I are not exactly on speaking terms at the moment. Yikes.
We did decide on our spring theme! We’re going to do Sunday Supper Spring! Instead of drilling down to a particular genre we’re going to go through some of our other cookbooks and pick some recipes out for our Sunday suppers. I’m sure we’ll revisit some old favorites, and make good use of what’s in the pantry if shopping is still a struggle. (For the love people, I just wanted ONE pound of hamburger.)
