Chicken and Dumplings!
Y’all, whoa. I’m very particular about chicken and dumplings because my Grandma Betty (rest her hilarious, weird soul) made the best ones EVER and whenever I make them, I make them like she did. So, I won’t say these were better (because she would haunt my ass for sure) but pretty darn close!
As you know, I don’t like cutting up chicken, so I used bone-in, skin-on legs and thighs. It was tender, delicious and falling off the bone. Adding the cream in at the end made the sauce positively luscious! I used the drop dumpling recipe. I don’t like the chewy noodly dumplings as much as I like the fluffy Bisquick dumplings, and these were very similar to that.
For once, I can’t think of anything I would alter in this one! Grandma used the Bisquick dumplings in hers and I would be tempted to use that one out of convenience (less measuring/ingredients) but this one is definitely worth the effort. This one will definitely be a dish I will cook again, comfort food at its finest! I’m pretty sure Betty would have eaten her fair share too.
