Barbecue Chicken, Mashed Potatoes, Green Beans
Happy Valentine’s Day! We don’t really go all out to celebrate this holiday, and I DEFINITELY was not going to try to go out to dinner on a Friday Valentine’s night. No thank you. So we stayed in, and I made this chicken recipe I found last week. I’ve never made my own barbecue sauce before, and I can confirm that it is 100% worth it! This was a Carolina style sauce, vinegary and mustardy with a little sweetness to it, but a little kick from the cayenne. YUM! It STILL smells good in here a couple of hours later!
I used my favorite already-cut-up thighs and drumsticks even though the recipe calls only for thighs, because who doesn’t like a BBQ’d chicken leg?? I will admit, I took the easy way out on the sides. My favorite already made Bob Evans mashed potatoes and some canned green beans. That chicken was so good though, it didn’t matter what else was on the plate!
A little note on this week’s cookbook. Jarrod has amassed quite a collection of cookbooks on the Kindle. He finds some good ones for $2 or $3, and it definitely helps because our kitchen bookshelf is already stuffed full! I don’t like e-versions of cookbooks as much, but we try to save the real books for the ones that are more special. I guess I’m going to have to write a post on the ridiculous amount of books in this house. You’ll get a kick out of that one for sure!
I did bump up this week’s meal to Friday, because on Sunday I am GOING TO THE BEACH and won’t be home for a few days. I’m leaving the husband and the dog at home, and going to lay in the sun and bake on the outside and try to pickle myself from the inside out! It’s been so gray and rainy and snowy and cold and yucky, I need some vitamin D STAT! Maybe I’ll post a beach pic? 🙂
