I can’t believe we’re already 8 weeks in to South For The Winter! That means we’re getting close to spring which is A-OK with me!! This dish was not as hard to make as I thought it was going to be, which is a plus. I did use boneless, skinless chicken breasts, and roasted them in the oven with olive oil, salt, and pepper for about 15 minutes on 350. I also just slightly under-cooked the potatoes because they are just going to get softer in the oven. It was most definitely delicious! And score, there are leftovers for lunch tomorrow!
I will caution you, the recipe calls for a 6 cup dish. I used a pie plate, which was just slightly under 6 cups, and there was some extra sauce that just wouldn’t quite fit (that I may or may not have just eaten with a spoon…). You could use a casserole dish, but then it’s not “pie” and I wanted it to be a pie! This one will definitely be a repeat, very comforting and the biscuit crust had just the right amount of crisp to it. There’s not really anything I would change with this one. I have to say, every recipe from the Jubilee cookbook has been a winner!
Side note on the beer, I was in Florida last week visiting my aunt and uncle and discovered this little gem. I got home mid-week and we were in the local liquor store on Friday night restocking and I found it in the cooler! Very exciting! It took the sting out of having to leave the warm sunshine to come back to February in Indiana. Anyway, make yourself some pot pie, and think warm thoughts!
