Buttermilk Fried Chicken, Pimento Grits, Green Beans, and Donut Loaf!
There was a lot going on for this meal! You have to prep the chicken a day ahead of time for this one. It takes some forethought, but I must say, I am a HUGE fan of soaking chicken in buttermilk. I’ve done it several times before. This is another Jubilee winner, but Samin Nosrat also has an excellent recipe in her Salt, Fat, Acid, Heat cookbook. If you watch her series on Netflix (which I highly recommend!) she explains the science of the acid in the buttermilk breaking down the chicken. It’s SO tender and juicy when you cook it! 100% worth the effort.
Ok, let’s talk about the grits. Y’all, I was totally wingin’ this one and IT WORKED! I had excellent pimento grits at Liter House in Indianapolis for brunch a few weeks ago, and knew I wanted to try to replicate them. I 100% cheated and used Quaker quick grits (not instant). Ain’t nobody got time to stand there and stir real grits for half an hour when you’re trying to fry chicken at the same time! I have a Pinterest recipe I found a couple of years ago for homemade pimento cheese, so I made a batch earlier in the day, and then stirred in a few spoonfuls at a time into the hot grits. I ended up using probably about 2/3 of the cheese (still have some to munch on later in the week, it’s great with crackers). The grits turned out GREAT! I was very pleased with them, very smooth and cheesy and just the right bit of kick. I did add a little salt and pepper right at the end.
There’s not a lot to say about the green beans. Canned, S&P, and heated up in the microwave. Sometimes I forget we’re adults and don’t HAVE to eat a vegetable, and therefore feel obligated to put something green on our plates. I hope my mother is proud!
Dessert? Yes please! Jarrod bought the Midwest Made cookbook and made the Donut Loaf. This thing is a cake that TASTES LIKE POWDERED DONUTS. Yes. Yes it does.
If you don’t make anything else from this post, at least make the pimento cheese. (I do leave out the jalapeno though). It’s delicious and so good to sit and dip a few Triscuits in! Enjoy!
