Patty Melts and Sweet Potato Fries
Happy Spring! We are cooking A LOT. I mean, a lot. We’re staying home as much as we can and doing our part to flatten the curve, which means we can’t partake in our favorite pastime, eating out at a restaurant. We do get the occasional take out order, we’re trying to help out our local businesses as best we can. Hopefully you are doing the same!
This week’s Sunday Supper is courtesy of one of my fave’s: Chrissy Teigen. Her cookbooks are great, and also hilarious. It’s nice to see a supermodel with a sense of humor and an ability to put away mass quantities of food! The patties were GREAT! Very juicy and tons of flavor. I will say, grating onion on the cheese grater was NOT a good experience. There were lots of onion tears shed, and I ended up chopping up the rest of it to a mince because the grater was just making a mess. Other than that, the patty melts were fantastic, and I was STUFFED! I also had a Pinterest recipe for the sweet potato fries, they were very good, lots of flavor. I do think I needed to make some of them a little thinner, and I probably could have left them in the oven for just a few more minutes to crisp up just a tad more, but still good.
I did only use two of the four patties, so the other two are waiting in the freezer for an upcoming evening when I have no desire to cook, and they can get thrown on the grill, so we’ll call that a win-win! I never buy hamburger patties already made. Even if they’re plain, I always just buy a pound of burger and make my own. It’s also super easy to freeze them, I wrap them in wax paper and stick them in a freezer zip top bag and they keep really well.
