Cornmeal Harissa Souffle’ and Grilled Asparagus
Happy Easter! I know everyone thinks it’s so sad to not be together, I really miss the family today. We always go to my brothers and eat ourselves silly then watch the kids hunt for eggs. Ham, potato salad, baked beans, deviled eggs, rolls, dessert, the works! I thought about repeating that meal but it’s pretty hard to do for just two people (although the leftovers would be pretty great!) so I opted for a new souffle’. If you haven’t had souffle’, you’re missing out. It’s like eating and eggy, cheesy, yummy cloud! This one is a little different by adding a little cornmeal to the mix and a couple of tablespoons of harissa. Harissa is a fairly mild, spicy chili paste, it’s used in Middle Eastern food, and you can find it at the grocery in the International section (usually by the tahini). It’s really good in lots of things!
The first time I made a souffle’ I used a Julia Child recipe. I expected it to be hard and a massive fail, and it was the complete opposite! It’s not as hard as it seems at all, and it turned out perfectly! I would like to say the same for this one, but you can see from the pics that it didn’t rise like it should have. I think I did a couple of things wrong. I over-beat my egg whites a little bit, and I missed the last bit in the recipe about cutting the temp down when you put it in the oven, so I left it in for about 5 minutes with the heat too high. I told you I would keep it real! It’s not all sunshine and butterflies all the time!
For the asparagus, I like to keep it simple. Since I couldn’t throw it in the oven with the souffle’ (you can’t open the oven door for the first 20 minutes at least) I grilled it. Just drizzle a little olive oil and kosher salt on, and toss. I put it on foil and just put it on the grill. For dessert we had some cookies Jarrod made the other day. It’s a David Leibovitz recipe, Kitchen Sink Cookies. They’re delish! (Sorry, I don’t have pics of that one but you can use the interwebs to find it).
I sincerely hope everyone is staying well, staying home, and being careful if you have to go out. This thing is no joke, Jarrod has a friend who was sick for SEVENTEEN days (but is doing better). Stay safe! Wash your hands! Make yourself something delicious to eat!
