Homemade Chinese Noodles with Spicy Peanut Sauce
I’m tired. I did yard work for about three hours this afternoon and then came inside, took a shower, and started making these noodles. I skipped lunch, and I was starving, so I must have REALLY wanted these noodles. They were worth not sitting down to take a break!
This is a recipe I saw online, David Lebovitz (who is a food god in my opinion) posted it on his blog last week after he made them for lunch. Good enough for me! I will post the link below, but if you’re on Pinterest it’s also pinned to my food board, feel free to steal it!
I have made homemade pasta which is a little bit different than this dough. No eggs, just flour, salt, and water. Easy peasy! Since I was already tired, standing there kneading the dough for over 8 minutes almost put me over the edge, but I powered through. While the dough is resting, make your sauce. Okay, I should say sauces. The recipe calls for teriyaki sauce, which she makes herself, and then that gets added to the peanut sauce. First I made the teriyaki so it could cool while I put the peanut sauce together. Kind of a pain when you really just want to go lay on the couch, but the bonus is now we have leftover teriyaki sauce and it keeps in the fridge for several weeks, so I’ll have to make something else yummy with it!
The noodles were dense and a little chewy, very very good! The peanut sauce was spot-on. Sweet with a little heat from the chili oil, perfect with the noodles. I garnished with some chopped peanuts and sliced green onion, perfect! we had some beer (needed it to counteract that chili spice), a Bell’s Oberon and a Taxman Investor. YUM!!! I’m on the couch now…
