Cheesy Tomato Rice and (more) Fried Green Beans
Hi Friends! I have turned myself into a part-time landscaper! Hopefully one of these days the yard will be how I want it and I can go sit down and read a book with a cocktail and stop working my ass off! That being said, I had ZERO idea what I was going to make for dinner tonight. I worked out in the yard most of the morning and early afternoon until it clouded up and rained, then I came in and took a small (much needed) nap. Jarrod pulled this one out of a hat, (actually the New York Times) so here you go!
It was delicious and SUPER easy to put together, another huge bonus! Another perk, it tastes a little bit like pizza! I used a serrano chili and it was pretty spicy, which we like, but if you wanted to cut the heat a little bit you could use a jalapeno, or even just add a pinch or two of crushed red pepper to the tomato sauce as it’s cooking. I think throwing in a clove of minced garlic would be good too. It was very cheesy and creamy and very good!
Okay, okay, I know. I’m obsessed with these green beans. But I’m not sorry! They’re good! And easy! My mom made them and she and my stepdad liked them. Tonight I put a little bit of onion in and sauteed, threw in the drained beans, hit it with S&P, and gave it a few dashes of Worcestershire sauce when the beans were browned. Yummy, easy, not sorry.
