Low Country Shrimp and Grits
I had almost forgotten how fantastic the Jubilee cookbook is! I swear, every single thing I’ve made out of this book has been AMAZING. Last year when we did South For The Winter, I made shrimp and grits from another recipe. I’m sorry I didn’t make this one sooner! Man oh man, this was GOOD. We almost fought over the last bit in the pan when we went for seconds!
It was also easy. I used Quaker Quick 5 Minute (NOT instant) grits, so they don’t have to cook as long as she calls for in the recipe, maybe 10 minutes or so. A lesson on cooking raw shrimp: it cooks FAST. Like in 5 minutes, and don’t overcook it or it will be rubbery. Follow the recipe on this one and they’ll turn out great.
I hope you enjoy this one, it was definitely delicious on a cold evening, and it’s going to be a repeat this winter!
