Seared Salmon with Spicy Red Pepper Aioli and Roasted Cauliflower with Lemon and Capers
Jarrod asked me what made this comfort food. Listen, both recipes came out of Ina’s comfort food cookbook. I’m not about the question the queen! I was however, looking for some healthier options because I am currently pushing maximum density, aka Chubby McButterpants. So, salmon and cauliflower it is! But if you’re going to eat fish and vegetables, you might as well throw some awesome flavors on them! The sauces are in moderation, but delicious, so there you go. I also toasted some Dave’s Killer 21 Grain Bread to go along with it, you’ve got to have something to soak up the sauce! If you’ve seen me post any of Flav City’s videos of the adorable Rose cooking with her mom and dad, this is one of his recommended breads for clean-eating. All organic and whole grains, and they have it at Meijer. Very satisfying!
I could have seared the salmon just a touch longer, it didn’t get quite the color to it as Ina’s, but fish is one of those things you don’t want to overcook and you can go from caramelized to flat out burnt pretty fast! Fish is good for you, so I’m trying to get it worked back into the rotation. Both sauces were great, as I’ve said before it is key to have a good sauce repertoire! The Aioli isn’t really spicy, the chipotle gives it more of a smoky flavor, which was great with the fish. And I love lemon and capers, so anything that gives cauliflower a punch can’t be bad! Try both of these out if you’re looking for a little lower-calorie meal. Delish!
