Rice with Mushrooms and Steamed Asparagus + Roasted Chicken
I don’t know who ordered the snow globe conditions outside, but it was not me! I did get a good workout in shoveling slush today, so I guess I’ve got that going for me. There really does need to be a sarcasm font.
Jarrod downloaded Jacques’ newest cookbook on the Kindle, and I had something else in mind for dinner, but after I saw this recipe I knew this was a perfect warmer! Full disclosure, I messed with this recipe a little bit. I would never in a hundred years suggest Jacques wasn’t perfect, but I needed a little protein after that sweaty shovel session.
I made a marinade with about 1/2 cup of olive oil (about because I eyeballed it), juice from 1/2 a lemon, 1/2 tsp each of S&P and herbs de Provence, and 1/4 tsp each of garlic powder, onion powder, and paprika. Give that a good whisk, then soak 1 lb of boneless, skinless chicken thighs in the oil mixture for about 30 minutes. Then on 375, I roasted them on a wire rack on a foil-lined sheet pan for about 20 minutes, and kicked the broiler on for the last 3 minutes or so to give them some nice color.
I followed the recipe for the rice, but I did use brown Jasmine rice instead of Carolina rice (had to look that one up on the interwebs, it’s long grain white rice). I’m on this lose-weight-be-healthy-shovel-slush kick and brown rice is better for you. Blah blah blah. You do have to cook brown rice longer than white, so if you substitute it will take about 20 minutes longer, give or take.
While the rice was cooking, I roasted the chicken, got it out and let it cool some, then sliced it into bite-sized pieces. When the rice was done, I mixed in the chicken. I did give the whole thing a squeeze with the other half of the lemon I had, and hit it with a little bit of freshly grated parmesan to serve. It was delish!! There are plenty of leftovers too, so if you want to make the rice as a side dish, you could cut the recipe in half. But I’m going to have tasty, healthy lunches this week!
